Our Coconut Vinegar uses a modern adaptation of a traditional process that starts with fresh mature organic coconut water (a by-product of Virgin Coconut Oil production) that is slowly fermented over the course of 10 months. During this time it goes through several stages to produce our most highly beneficial enzymatic tonic vinegar. How to use coconut vinegar
